How about a low-carb recipe with very few calories, which can be cooked either over coals or in the electric grill? It’s tasty and quick!

Yield: 10 kebabs

Preparation Time: 2 hours 30 minutes

Difficulty: Easy

  • 2 pounds (1 kg) boneless, skinless chicken breasts (or tenderloins)
  • 1 cup plain low-fat yogurt
  • 2 tablespoons cilantro, finely chopped
  • 1 teaspoon cumin
  • 1 tablespoon curry powder

Necessary equipment:

10 bamboo skewers / Bowl / Strainer / Barbecue or Broiler

  • Trim excess fat. If using tenderloins, cut them in half crosswise. If using chicken breasts, cut them into strips about one inch (2.5 cm) wide and 2 inches (5 cm) long.  Place chicken in the bowl
  •  Combine the other ingredients and mix the paste with the chicken. Cover the bowl and store it in the fridge for two hours. Turn occasionally.
  • Use a strainer to drain meat and thread onto skewers.
  • Grill the kebabs for 6 minutes per side or until no longer pink, or broil for 5 minutes per side or until no longer pink.
  • Serve immediately.

This is a tasty dish that goes really well with a salad. It’s a great way to add taste to any diet!
