Some people only like to eat soup when it’s cold, but I think soup is a light meal that goes well with any weather! And, it might not replace a hug but it makes you feel all warm inside! So instead of going after some calorie-filled candy bar when you are feeling needy, how about a healthy bowl of sweet potato soup?

Necessary Equipment:

Large pan / Standard stove / Blender or food processor

Ingredients:

  • 1 teaspoon sunflower oil
  • 2 large leeks, sliced
  • 1 teaspoon grated ginger
  • 680g (1 ½ lb) sweet potatoes, cut into 2.5 cm (1-inch) cubes
  • 1 teaspoon curry powder
  • 4 cups water
  • Nonfat yogurt
  • Chopped chives

Instructions:

  • In the large pan, heat the oil. Add the leeks and cook until soft over medium heat.
  • Add the ginger and cook for an additional 2 minutes.
  • Add the sweet potatoes, the curry powder, and the water.
  • Bring the mixture to a boil, then reduce the heat.
  • Cover the pan and let it simmer for 20 minutes, or until the potatoes are tender. Occasionally stir.
  • Remove from the heat and let it cool.
  • With the blender or food processor, blend the soup in batches until the mixture is smooth.
  • Return it to the pan and reheat in order to serve.
  • Add a dollop of yogurt and season with chopped chives.
